Hi im booked this week i have a football cake for Thursday morning and a Halloween cake for Friday, i have them in the freezer, how would you start to work on these?? would you decorate on Tuesday and finishe the football one on Wed this will be sitting on a 11x15 sheet cake for Thursday and then decorate the Halloween one on Thursday for the friday ?? im stumped?

I think your planning is going to work. I usually schedule at least two days to make a cake.

For example, I have a cake that I need to deliver on Saturday - I'm going to bake the cake Thursday night, sculpt and decorate it Friday night, and if I need to do any touch-ups I can do those on Saturday morning - worst case scenario. Of course this is all after my full-time job as well...

Sounds good to me too.

Also, I like to get all my piping bags ready and anything else I can do ahead of time so all I have to do is decorate. I made red and black BC last week for a cake I am doing this week and another cake for the week after.
