I was wondering if anyone else has had a problem with the strawberries sweating and "shrinking". Is there something I can put in the chocolate, or a different technique I should be doing? Also, can I pour ganache over Italian Buttercream? I am just worried it will melt on me.

It's best to wait and dip your strawberries the day that they are going to be used and not put them in the fridge. They sweat as they come to room temp which will cause them to seap juice. They may still seap a little, but that's really not preventable.
