I am about to make my first batch of marzipan using a recipe from Emeril that I found on Food Network. I was wondering if there were any tips or tricks to making and working with marzipan that a first time user would find helpful.

i know we shouldn't bump but since it's going on 12 hours I thought I would try and see again if anyone had any marzipan tips.
