My hubby just "discovered" sweet potato pie.....and loved it...but he is diabetic so I'm looking for a low sugar one to make him for Thanksgiving.

You can use Splenda. It is great.
I make a low sugar pumpkin (very similar to sweet potato). The secret to the best sugar free taste, is to use a little real sugar.
I cut the real sugar to about 1/3 of the recipe and then use only 1/2 Splenda, rather than the remaining 2/3 measure. There is enough sugar to help the texture and color, and enough sweetner so that it is nicely sweet.
