Hi I am looking for a frosting which is light and not too sweet and easy to work with. I also need to know which types of frostings are suited to cool weather and which to warm weather. Thanks a lot

Hi, well the only icing that is really light and not very sweet is a whipped cream icing. Buttercreams are mostly very sweet, unless you do a IMBC (italian meringue buttercream) or SMBC (swiss meringue buttercream). Generally buttercream is for cooler weather and fondant can withstand more heat, unless you do an all shortening buttercream, those can withstand more heat than regular buttercream. Whipped cream frosting has to be refrigerated. I hope this helps.
