How Long Will A Frosted Cake Stay Fresh?

I am just starting out selling cakes at my local Flea Market. I have been baking all day Thursday & Friday so the cakes would be their freshest for the weekend. Now, I am getting all kinds of orders for the Holidays. My question is how long will these frosted cakes, i.e. Red Velvet, Carrot Cake, Peanut Butter Cake, Chocolate, and German Chocolate stay fresh? I think I will need to start baking on Monday for delivery of the ordered cakes by the weekend before Thanksgiving but would they still be fresh enough for Thanksgiving Day? I use the Enhanced Cake Formula for my cakes so they have sour cream in them and then of course, there is the cream cheese frosting on some of the cakes to consider. Does the sugar in the cream cheese frosting stabilize the cream cheese like it does the milk in buttercream? Any help would be greatly appreciated. Thank You.

You can certainly bake and freeze, or even bake, torte, fill crumb coat and freeze.
