How Early Can You Fill With Bananas???

I usually fill my cakes and ice and decorated them 12 to 24 hours later so they can settle. I have a triple stack cake with fondant decorations due Saturday at noon. They asked for banana filling between all the layers. How early can I fill these cakes with banana filling since they turn so quickly? I found a recipe calling for water and pet milk so I wouldn't have to refrigerate??? Or do I?? Can anyone help?

If you plan to use fresh sliced bananas be sure to refrigerate when ever you are not working on the cake. Also you can use lemon juice to dip the bananas in and it will keep them from turning brown so quickly. If you are using something like a pudding with the bananas be sure that the bananas are completely coated and this will also slow the browning.
