Carrot Cake From A Cake Mix?

Anyone have a recipe for making Carrot Cake from a cake mix? My mother mentioned you could make it from a spice cake mix, but I haven't been able to find a recipe.

Anyone have one they like? I really love carrot cake with pineapple too.

I made up one based on the "cake mix DR"s recipe.


Here it is ...Oh and everyone asks for this cake now!!!


1 yellow cake mix with pudding in it.
2/3 cup Orange juice
1/2 cup oil
4 large eggs
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
3 cups carrots---freshly grated
1/2 cup raisins

In mixing bowl add cake mix, oj, oil, eggs & cinnomon. Blend on low speed for about 1 minute. Scrape bowl and mix again for 2 minutes more. Fold in grated carrots and raisins. Bake at 350 deg. for 30 to 35 minutes for a 8" round. closer to 45 min for a 10" square.
