I don't know what your skill level is, but here are 9 pages of deer cakes, some with directions... http://www.cakecentral.com/modules.php?name=gallery&meta=search&type=full&search=deer
-
If you let us know the style of cake you need - 3D, flat picture, etc we can help you better...

OK - this cake http://www.cakecentral.com/modules.php?name=gallery&file=displayimage&pid=11478 was a practice cake, so you can see some of the construction. The bottom layer was carved from a 9x13 cake, the tummy area is a regular circle cake pan, and the nose area could be made from 2 stacked cupcakes. Ice (frost) everything together.

If you don't want it so stair-steppy, stick the frosted-together cake in the refridgerator. After it's good and cold, bring it back out and start cutting it down into a more smooth shape with a bread knife. Any bits you cut off can be used to fill in other areas, like between the chest and muzzle.

The antlers look like they may be wood or several layers of cardboard just covered in icing.

Hope this helps! 7yyrt
