Can anyone help me? My daughter"s birthday is in a week and a half and I don't know what to do. She is allergic to dairy, eggs, wheat, and soy. I think I can manage to make her a cake using special flour and one of the eggless cake recipes, but does anyone have a frosting I could use? Thanks!

Making dairy-free frosting is easy and can actually taste quite good.

2 cups shortening
1 tsp. clear vanilla
1/2 tsp. salt
1/4 to 1/3 RICE MILK
2 lbs. powdered sugar

Beat the shortening until smooth; add the vanilla, salt, and rice milk. Mix until just combined. Add the powdered sugar, beat until just combined and then on medium speed for 1 minute.

When you get your Rice Milk, be sure that the package says wheat free and gluten free. Some use thickener with gluten in their rice milk.

This frosting tastes really good and makes beautiful decorations, especially roses. They are translucent! It also freezes well.
