I am doing my first wedding cake for a friend and she wants cheesecake. Can you do that? How do you keep it fresh while decorating it? Does it need to be in the fridge right until delivery? This sounds tough, help!

I did a cheesecake wedding last year, and it was fine, even though it was delivered in 96-degree heat and sat out at the venue for a couple of hours til they served it (yikes).

All I did decorating-wise was ice it with white chocolate/cream cheese BC, then wrap a ribbon around the base, so that was quick and easy. They stay fresh for days in the fridge, so they're easy to bake ahead. I've even heard they freeze well but haven't tried that.

Go for it, but just keep it all as chilled as possible for as long as possible, to be safe.

Personally, I quit offering them because of the chill factor and the sitting-out-at-the-reception thing. It freaked me out a bit too much having to leave that cake sitting out on the table for so long...jmho
