Caramel Cake For A Wedding Cake?

Hi Ladies----Has anyone ever done a caramel cake with caramel frosting for a wedding cake? My client wants a three tiered square. Will this cake hold up well to stacking? Also, caramel frosting cannot be piped, right? Thanks!

I have not heard of caramel cake for wedding cake, no here in the US, anyway, but that does not mean it cannot be done. With any cake, you have to make sure there is enough support underneath to hold the top tiers/stacks. There are caramel buttercream recipes available, and hopefully, someone her in the forums knows which formula can be piped.
