icon_smile.gif I wanted to share this with everyone......have had several requests,
and wanted to be able to let everyone use it......here goes! Enjoy!

Cookie/Petit Four Icing

2# powdered sugar
1/2 cup light corn syrup
1/2 cup plus 2 tsp. water
1 1/2 tsp. vanilla
1/4 tsp. salt
Colors of your choice

Blend this all well with your mixer. When smooth, add 1/4 lb of confectionary coating( candy melts or summer coating, melted and cooled ).

Again, mix until well blended, always at low to med. low speed. If thinner icing is desired, blend in more water, a tablespoon at the time until desired consistency.
Pour generously over cake squares placed on a wire rack over waxed paper.

I've been wanting to try make petit fours, and now I have a recipe to try with them! Thank you. That butter cake/lemon sounds just delish!
