My MIL gave me a copyrighted 1981 book -The complete Wilton Book of Candy. Does anyone else have this book? Are there any recipies in it you think are particullarly good. There are several I plan on trying before the holiday goodie platters are made. I have already tried several and have loved all of them.
I have made the Creamy Cream Cheese Fudge (would be great as a choc. candy filling), The Creole pralines, Light Carmels, and dipping carmel. The carmels are expecially good!

Don't get me going on that book. I love doing something new in candies and I always get that book out. Yes I have done those and the divinities also. And the hard candie bowls are great to give with home made candies in it. icon_biggrin.gif

I had thought I had lost the book for several years. I had at one time separated my cake/candy books from my regular cook books and left it with the regular. Looking for it with the separated books and icon_cry.gif . Well last year I finally found it icon_biggrin.gif . Now I will be using it more often.

this is so old but I was so interested in this post I bought the book (81 edition) for .81 yes .81.. i paid 6 bucks to get it shipped priority though LOL

I love this book! It is the best thing my MIL ever gave me, well aside from a wonderful husband!

i was thumbing throughit yesterday drooling all the while.. How can I decide what to do first!!

pralines? caramel.. one of those will probably be first

the caramels are so good. Really watch your temperature on them. Too little heat and they are to soft, to much and you will break your teeth. If you get them to hard though don't worry, I have found that you can get them warm again and add some sweetened condensed milk and it will make them the right consistancy again.

Over Christmas I made HUNDREDS of the caramel squares. I used them for just plain squares, dipping caramel for apples and turtle pretzels, and I refridgerated them- making them very firm and easy to dip - then dipped in choc, for rolos candy. I also made turtles with caramel, nuts, and choc.

One more recipe that's in that book is the mint patties. Those of us that can remember seeing mints decorated like petit fors, those are the ones. People made them for showers and tinted them in pastel colors, then decorated with rose buds, etc. and they just melt in your mouth. Makes a beautiful presentation!
