I am looking for ideas how to do this. I want to do a rich chocolate cake with either dark chocolate icing or ganache. I would like to do a mint layer in the filling - any ideas how to do this? Has anyone used creme de menthe? Should I stick with a Lorann oil? I want it to be rich! Kind of like a girl scout cookie cake, but darker.

I swear I just saw a recipe using crushed Andes mints. You can buy them already crushed in the baking aisle.

I am looking for the recipe now...

Chocolate For the Cake Mix Doctor has the world's best recipe for that. It's called Cream Cheese Mint Chocolate Pound Cake. OMG it's terrific. We also make it substituting 72% dark chocolate for the Andes mints, and it's rich and dark and moist. The recipe calls for it to be baked in a bundt pan and sprinkled with powdered sugar, and we've done that, but we like it baked in a regular pan and iced with either regular buttercream or chocolate.

I am wondering if you could used the andes mints to make the ganache???

I found two recipes though...

A mint Whipped cream filling
1 1/2 cups of chilled heavy cream
3 tbsp of creme de menthe liqueur plus scant 1/2 tsp peppermint extract
4 to 5 tbsp of sifted powered sugar, or to taste

Whip chilled cream just to soft peaks, add flavoring and sugar then whip to stiff peaks.

The Chocolate mint bavarian cream filling is a much more lengthy recipe. If you want it, let me know and I will type it up. (Sorry, they are out of a book, not online. The book is "The Perfect Cake - 150 Cakes for every tase and occasion".)

Grrr.... I just spent 15 minutes typing in the recipe and a page came up that said thank you for submitting your recipe. But now I can't find it...
