I am making 25 - 6" cakes for a customer.
I plan to cut the 6" round cakes from sheet cakes.
There will be a lot of crumbs, and plan to ice with decorator
buttercream and then marshmallow fondant. Does anyone have
any help comments on decorating these canes and ideas for leftover cake pieces?
Thanks.

Is there a theme or anything like that? Make cakeballs with the leftovers, they are awesome. I have made them every night this week.

I did that once and used several 6 inch pans, borrowed from other cake decorators in the area. It was a lot of work, but I really enjoyed the challenge.

I have three six inch pans and the most I have made is 34. I would not cut them down but spend the money or borrow from someone. It is quite wasteful

I would agree with some of the other posts, I would use the pans instead of cutting them out, too much trouble and waste. Borrow some pans from some friends or rent them. They will be much easier to work with if they have baked sides. Or start baking now with what pans you do have and freeze wrapping well.
