I read about 'The Viva method' here and that is the best tip I've learnt and used to smooth my buttercream(crusting)icing since.
But how can I smooth icing that does not crust very well?

The hot spatula method works really well for non-crusting buttercream. I boil some water and dip my spatula in the water and wipe off excess water with a cloth. Then smooth over your cake, the bigger the spatula the easier it is.

Hope that helps, ~Denise
