Fresh Strawberry Filling & Fondant--How Soon?

I have a request for chocolate cake and fresh strawberry filling with MMF.

How soon can I put the filling in the cake--because once I put on the MMF the cake has to stay out of the fridge right?

Also, with fresh strawberries--do I just slice and stir into the BC for filling?

Finally, will baverian cream filling freeze ok with a crumb coating?

I'm not sure I'll be of much help...

But I attempted strawberry buttercream yesterday & what I did was made my buttercream recipe as usual, then pureed fresh strawberries. I strained the puree to get any chunks and most of the seeds out and mixed in a bit of it into my buttercream until it tasted the way I wanted it to. However I used mine for a topping so maybe you do want it a little chunky... ?
