Hi everyone:
I am having a hard time finding some recipes that I can use with my pastry pride. I will be definately using it for my mousse filling, but what about as a frosting? I was going to use it to frost a cake and then use fondant accents?? I have a recipe for buttercreme but you use a carton of heavy whipping cream as the liquid, could I just use the pastry bride for that instead and then it would be more stable???

I am a little confused on how to work with it? I want a frosting that is easy to smooth and that I can use the viva method on??
Any help is appreciated. Thanks

Wish I could help but was just about to post a question about bettercream. I have had a bride request it for a wedding cake and have never used it. What is the consistency of this frosting. Or a good place to purchase it? What's Pastry Pride?

i use Pastry Pride all the time to frost my cakes and cupcakes. it is not too difficult to smooth as long as you don't overwhip it (which i tend to do.. argh). i'm not sure how fondant accents would hold up. when i put fondant ribbon on a cake with Pastry Pride, the fondant got wet, and it wasn't too pretty. fondant might hold up better on Frostin' Pride, which has a consistency closer to buttercream, whereas Pastry Pride is a whipped topping.

definitely cannot use the Viva method on Pastry Pride or Frostin' Pride, but a hot spatula works great for smoothing.

i've subbed Pastry Pride for heavy whipping cream in recipes without problems, but i don't know if it would make your buttercream more stable.

i've never used Bettercreme, but i believe it's a similar product to Pastry Pride.

here's some good info on working with this icing.
