I've been using the paddle to mix all of my cake batters.
Just started a class and the teacher said that she only uses the whisk to mix batters.
What do you use?
I use the wisk for my cake batter and the paddle for my icing!
I use the whisk for batters, and the paddle for icings. I'm pretty sure that's what the mixer's instructions say to do, but I don't have them handy.
I use my hand mixer for the batter. The few times I've used the stand I've used the paddle. I would think that the wisk would add air. Air makes bubbles which leave tunnels in your cake.
If the paddle has worked fine for you, then keep doing it that away.
I do the same as tlnewman - whisk for cakes, paddle for icing.
I use the paddle for cakes and icing. I use the whisk for whipping cream and meriange. The wisk incorporates air into whatever you are mixing!
I use the paddle for my batters and the whisk only whem I make a sponge cake. Using the whisk you put too much air in the batter and the cake will have many holes. Cakes are creaming method. Breads are Direct method.
Good question! I've used both and I perfer the paddle for icing and cake batter....seems to mix it better for me.
