Once the cake is covered with the ganache can I freeze it for a week or more??
I wanted to do all the basics well in advance and then take it out and do the 'decorating' part a couple of days in advance of the wedding. Can I do this??

When I worked at a store bakery we would cover cakes with a ganache type icing and freeze them. And pull them out and sell them. So I don't see why not at home too.
