Help. I am in need of a good recipe for pumpkin cake. I am doing a wedding cake next week and the bride is requesting pumpkin cake. I would really like to use a box mix and add to it, but will consider scratch cake. What I am finding in my trials is that pumpkin weighs down the cake so it doesn't rise very well. I want light, fluffy. I'm asking for too much aren't I? I need some ideas. Please help me!!!!!!
here is several reciepes.....
hopefully one of them might help.
