Help. icon_cry.gificon_cry.gif I am in need of a good recipe for pumpkin cake. I am doing a wedding cake next week and the bride is requesting pumpkin cake. I would really like to use a box mix and add to it, but will consider scratch cake. What I am finding in my trials is that pumpkin weighs down the cake so it doesn't rise very well. I want light, fluffy. icon_mad.gif I'm asking for too much aren't I? I need some ideas. Please help me!!!!!!

here is one, but it says it's a bundt cake........I wonder if it would work in a regular pan??

1 box Cake Mix - Yellow
½ c water
1/3 c oil
4 large eggs
1 (8 oz) tub Cream Cheese
2 t Pumpkin pie spice
1 t Cinnamon
½ t nutmeg

I haven't tried this one, but it is a recipe I have had saved for a while.
