I was just wondering what the best way to keep a batch of buttercream is. I made this last night and used some but would like to save the rest for next weekend. should I freeze it or just keep it out in an air tight container?

What recipe did you use? If there is milk and/or butter in it, store it in the fridge. If it is all shortening, you can leave it out on the counter.

It will be fine in the refrigerator for 2 to 3 weeks. So next weekend will be good in an air tight container.

If no milk is used and you use just shortening, water, confectioner's sugar and water, it will keep for about a month if you keep the temperture cool inside your home. I always smell mine and when in doubt, throw it out icon_smile.gif

sorry, i forgot to mention the ingredients. It is butter, crisco, powdered sugar and flavoring. Sounds like the fridge will be the best. Thanks all for the help.
