I am trying to price a cake. I have the pricing matrix but am unsure if my BCT would be medium or large. Does anyone have approximate measurements they use when figuring prices on these?

I don't charge for BCT. I usually use left over BCI for it so it isn't a big expense for me. If I did charge it wouldn't be over a dollar or two.

TC, you may be using left over icing, but you need to consider your time and talent. That's worth an extra charge! Janice

Yea, it does take a little longer to do the BCT. I guess I need to make a price list up.

The pricing matrix I have has BCTs listed as small, medium & large with prices for each one. I am trying to figure out what size my BCT would be considered.

Has anyone used the pricing matrix to figure a BCT for a cake?
