Coould someone please help me I made the mini cup cakes and baled them for the specific time and then took them out of the oven and they sunk in the middle. Why is that? I have made big cupcakes before and that has happened also....what can I do so that does not happen? Thanks Jen

Cut one open, but my guess is that they're not done all the way. Could be an oven temp problem, do you have an oven thermometer to check? You really do need to test cakes rather than go by a time.

When that happens to me, the cake is not fully cooked. Make sure you check the temperature of your oven. An oven thermometer really helps as not all ovens are calibrated the same.

To check for doneness, I insert a tester in the center and the cake is done when the tester comes out clean. If not, leave baking in the oven for a few more minutes until tester comes out clean.
