Does anyone have a good (great) recipe for vanilla cake that is from scratch! The one I have made from a Wilton recipe came out like a brick. I need a cake that is pretty firm, yet moist.I have a wedding cake to do in 2 weeks and I'm still scrambling for just the right cake. Does anyone have any ideas?

Are you completely opposed to a box mix?
I use Betty Crocker golden vanilla cakes mixes for all of my wedding cakes and they get rave reviews. People always ask if it is a home made cake.
I've never used one of the extender recipes but maybe if you did the mix and extender it would be a little of both. (box and scratch)

I recently made a cake for a Mexican baptism. They wanted a cake that wasn't super moist, but wasn't super dry either. I made this cake that I found the recipe for off of this website. I also tried making one from scratch that turned out horriable! No one could tell this one was from a box and it tastes great!
