has anyone made any soy frostings? I am wanting to expand into doing a healthier line of cakes that does not include all criso frostings which isthe worst possible thing for you health wise. I was always a very health conscious person and still am not eating any artificial flavors colors or preservatives in my food and also not eating anything with any hydrogenated oils however since getting into cake decorating I have found myself tasting my frostings and cakes of course so I know what they taste like so I know if they are any good before serving them to ppl or selling them to people, so of course this has made me think of expanding to a healthier line of cakes (still making the traditional cakes as well, and I am sure that will still be my primary line of cakes). I find that more and more people now a days are getting more health conscious and I would like to offer a guilt free alternative to the artery clogging cakes I am making now lol.
I'm not sure what you mean by soy frostings other than guessing using soy milk instead of cow's milk. Anyway, my personal taste is for rice milk.
If you are getting into a new area of cake ingredients, be extremely careful for those who might have food allergies or sensitivities. I made gluten-free cakes and absolutely everything has to be free of ANY gluten. This means reading all labels and do some research about allergies. For example, blue lake dye has gluten in it, so it can't be used in anything gluten-free.
As for soy products, again, you need to be aware of possible issues with it. Soy makes my stomach hurt, so I stay away from it.
Customers with food issues will really appreciate a good cake. They are difficult, expensive, and stressful.
Before I gave up on selling cakes (competition only now) I made fat-free, low fat, dairy-free, egg-free, and gluten-free cakes. Sometimes they had to be combinations of two or more of these.

AmandaPanda, I guess it depends on what you mean by healthier. Since cake is a special occassion food, perhaps healthier could mean all natural, like fresh butter, no crisco, organic ingredients and the like. I don't know if there is a truly healthy frosting because you need some kind of fat, which by it's nature, clogs arteries. Perhaps your healthier line could have simple fruit glazes or powdered sugar designs. Good luck!

I am speaking of a tofu based frosting. I know it won;t be totally healthy becauseof the sugar that needs to be in it, but I was watching a show the other day and I WISH I could remember who it was but they made a tofu based chocolate frosting and it actually looked good. just seeing if anyoen knew of any goodrecipes out there like that.
AmandaPanda, there is a book called Sinfully Vegan by Lois Dieterly that has some tofu frosting recipes you could try. I haven't tried any myself and I don't know whether they can be used for piping, but maybe you could check it out at the library and see what you think.
