what caused the crumbs??

it had no filling.. i wonder if that had anything to do with it?

There is not anything in this cake that would make it that way.. that is strange that is for the most part the way I make cakes...

Would you happen to have a photo of this cake when its been cut??? Meaning one of the ones that they say is crumbly???

its too late tonight to make this cake but I will and then see what it does...

How are you baking this?? Temp and how long???

Ladycake Posted 28 May 2005 , 7:02pm

Ok I have one in the oven right now....

The only thing I can see right now is that a box calls for 1 1/4 cups water and this recipe is only doing 1 cup milk so its a 1/4 cup short... Batter is a bit thicker then normal....

Also a box calls for 1/3 cup oil and the recipe is calling for 1 stick of butter a bit more oil but not sure that would matter cause I have used a full stick of butter before in mixes...

So WERE going to have to wait till it comes out of the oven...

I can't wait to see what happens. It's weird because it's not dry crumbly, it's moist and so yummy. It just has so many crumbs!

Mine did the same thing... I think that its cause there is not enough liquid in the mix.... I am going to make another today or tomorrow with the what I think should be the right amount of liquid... and see what happens... Your right its not a dry crumbly but to me the outer sides of the cake was dry but the inside was just moist as can be.... I am going to play with this... My friend that is here for the weekend agress that its not enough liquid... Will see.... its also a bit more butter then what the box calls for... Box calls for 1/3 cup and with a full stick of butter your doing a 1/2 cup and the liquid is 1 cup and should be 1 1/4 cups liquid... The batter is supper thick compared to other....

Ladycake Posted 29 May 2005 , 5:47pm

I too liked the taste..... I am wonding thought what kinda milk did you guys use??? I used Whole Milk and I wonder if that is what is causing it to crumble??? Still waiting for the other one to come out of the oven... So will see...

I used 2% milk.. I think it was delicious too!

zoozieqv Posted 29 May 2005 , 7:53pm

Hey, I just made a cake this weekend using a similar recipe.... I used a white cake mix, milk, oil and egg whites and mine was the same way. The customer wanted an 11x15x2 chocolate cake with an 11x15x2 white cake on top and buttercream in between. Everything was fine until I went to put the white cake on top and it crumbled in my hands....like into 8 pieces and when I was picking it up it was crumbling away. It was also a moist, delicious cake....just a crumbly one!!! I was baffled. I just pieced it together on top of the chocolate cake and hoped that the buttercream held it together...which it did, but I wonder how it was when they cut into it. I wanted to re-bake but didn't allow any time to do so. Let me know what y'all find out. Oh- I used 2 cake mixes and 2 1/2 cups of 2% milk.

peacockplace Posted 29 May 2005 , 8:33pm

This is so weird isn't it! I used 1%milk, so I guess the type of milk doen't matter. Good luck on your experiments!

Ironbaker Posted 29 May 2005 , 10:29pm

Hi ladies...I use a similar recipe but do 1/3c butter and 1 1/3 cup liquid (milk or buttermlk)...it doesn't come out so crumbly. I'm anxious to see what Ladycake finds out. It is a super moist cake. icon_smile.gif

cakegal Posted 29 May 2005 , 11:12pm

I used a similar one as well......just the outside of the cake was crumbly.... which shocked me.... I'm waiting patiently for the results from ladycake...
Very interesting topic..

Ok guys this is my thoughts on this ....

I made the other cake today like I said I was going to do... This time I did it with 1 stick of butter 1 1/3 cups milk 3 large whole eggs 2 teaspoons vanilla and this one was not crumbly... So I think that there was not enought liquid in the other one that is why it was crumbly and I think that eggs may have had some to do with it too... So try it that way and see what you think ... it was tasty and not as dry and it was not crumbly....

Tomorrow I will try and take photos so you can see....

I used the Cake Doctor recipe for the butter cake for my godson's cake and it was so crumbly that I was embarassed at the party! Other times I have made the same recipe and it was perfectly fine.

Another time I used the chocolate cake recipe in the same book and the same thing happened. So is the trick to just add 1/3 cup of milk extra? I lost sleep over this!!!
