This is my first cake i'm trying in fondant. i kept it in the fridge for 2 days and i'm having a hard time rolling it out. how long must it be unrefrigerated to work with it?

Fondant is usually stored in suran wrap, the a zip baggie on the counter. Never heard to store unused fondant in the fridge. What type of fondant is it? If it is the MMF, try nuking it in the microwave for a few seconds(5) at a time until it becomes pliable again. Becareful though, the fondant could get a hot spot in the middle(outside will still be cooler to the touch) and you could end up with a severe burn. So watch out for a hot center. You can also need in a little crisco to help it become more pliable too. I actually use both crisco and the microwave to get my fondant workable after it has been stored for a bit. HTH some, Jen

Ditto what Jen said. Put it in the microwave for a few seconds (try 10 seconds at a time just to make sure it doesn't get too hot) and knead some crisco into it.

Good luck!
