im making my first wedding cake this weekend, its a 2 tier cake , sizes 12in and 8in. im making carot cake with the crusting cream cheese icing recipe on this web site. I have noooo idea how much icing i should make. It doesnt say on the recipe how much it makes. But ive made this icing before and i know it makes more that one batch of bc icing makes. tell me your best guess, cus your guess is probly better than mine. should i make 3 batches 4 ? what do ya think? thanks!!!!

I'd err on the side of caution and make 4 - you can always freeze any you might have left over!

I agree with BonJoviBabe, 4 batches should be enough with a little left to spare.

But I ALWAYS have leftover.
