Can someone please explain to me how the "quilting" technique is carried out on a cake. I would like to try this with buttercream.

I known of three ways to do the diamond pattern or "quilting" on a cake.

First way: Get a diamond impression mat and lightly press it into your buttercream cake after it has crusted all over.

Second way: Get one of the vinyl tablecloths that has the diamond pattern sewn into it. (A lot of the older vinyl tablecloths have that pattern and at Easter my local Wal-Mart sold them.) Cut a piece of the tablecloth and lightly press it into your buttercream cake after it has crusted all over, same as you would do with an impression mat, but cheaper.

Third way: Wilton makes a little handle with two wheels on it, one for cutting and one for the quilted look (kind of looks like a mini pizza cutter). You can mark your cake into divisions and then roll the tool diagonally from one mark to the next to make your diamond pattern. Or, you could freehand a fancier quilt pattern with this tool as well.
