I already delivered the cake....and I had it refridgerated overnight. It seemed fine, but the cake is being eaten tomorrow and I know my friend had left the cake in the fridge. The cake is frosted in cream cheese icing and covered in Satin Ice fondant.

So yeh...refridgerate or no? =)

Yes it can be refridgerated without any problems. Your friend just needs to take it out at least an hour (maybe more if it's a big cake) so the cake has time to come to room temp and they need to be careful not to touch it until the condensation evaporates.

I use FondX and it says on the container that it can be refrigerated. Not sure about the brand you used.

I have only done two cakes covered in MMF and they both were in the frig and were fine. But i agree you do need to take it out an hour before serving and be careful of touching it while there is condensation on it!
