I have a question regarding refrigeration of a cake that is covered in butter cream and fondant. Do I refrigerate it or not??? This is my first time using fondant, so far I love it!

Fondant doesn't need refrigeration. Is the buttercream made from butter? It might.

You'll get different responses.... I refridgerate all my cakes and I don't have a problem with sweating. I live in AZ and that might be why. Your going to have to experiment to see if it's a problem in your area. I believe the people who live in the south where it's very humid have issues with sweating.

I have also refridgerated cakes covered in fondant without any problems. I live in California, so again, humidity is generally not an issue here.

I live in VA, so this may be a problem for me! The butter cream is made with butter. I think I am going to take my chances on the refrigerator or I could turn the air conditioner on and freeze out my kids!! icon_lol.gif
