I haven't done marble cakes in the past, but I just did a 15" tier for a bride in marble cake that I had to bake 3 different times, using two different recipes, and all three of those layers sank badly in some areas. I thought "I'm just not going to offer marble cakes any more." Who knew they'd be such trouble? And I looked for a box mix for marble cake but couldn't find one....
I have another whole wedding cake in June to do, and she wants the whole THING in marble cake.
Does anyone have experience with my Nemesis--the Marble Cake? lol
I'd love a good recipe or box mix to look for at this point...Or I'll tell her to do a layer of yellow and a layer of chocolate, sandwiching filling between them and call it good...haha
Dunkin Hines has a marble cake mix... not too sure if any other ones make it... maybe Betty Crocker.
I had a little bit of trouble the first few times i made a marble cake. DH does have a marble cake mix though.
I use DH box mixes. Equal parts of DH White cake and DH Chocolate Fudge cake. I usually mix and pour in the white cake first . Then Mix up the chocolate and drop spoon fulls of it randomly into the pan. I take a spatula and swirl (pushing the chocolate down and the white up). I have found that the marble i do need to bake a little longer b/c of the different flavors of cakes mixed together, this might be eliminated with the marble cake mix. I also bake my marble cakes at 325 since i bake them longer.
A few other possible concerns:
-Is your oven large enough for a 15" pan? is there at least 2 inches all the way around for the air to circulate?
-Is your oven temp correct?
-What temperature did you bake it at?
-Did you use a heating core in the middle? it is a fairly large cake.
