Hi all, I need some help.
I have an order for a double layer 1/2 sheet carrot cake for this weekend.
I need a Fluffy Cream Cheese Icing recipe, if there is such a thing.
I have my mom's cream cheese icing recipe that I grow up on, but want a fluffy version. Or how to make it a fluffy version.
I have seen one recipe that has a whipped topping folded in, but I am scared that it will start to water once the topping starts to break down.

I made this recipe and this is really good.
3 ounces cream cheese
1 tablespoon warm milk
2 1/2 cups confectioners sugar
1 teaspoon vanilla
Mash cheese with milk. Add sugar, gradually, and vanilla. Beat until creamy. Any other desired flavoring may be substituted for the vanilla.
If you use whipping cream or heavy cream instead of just milk then it will make fluffier.

May make a small batch to taste. I think they are ordering the cake just for the icing, so I really hate the change it to much.
One more quick question, how does it pipe?
It pipes very well if want more stiff add little bit sugar and if you want medium or thin then add 1tbspoon milk at a time and just stir with your spatula.

I just love all flowers. I am wondering which tip did you use for white flower with red edges.
That flower looks magnificent.
All the flowers are made from RI, for the petunias I used tip #104 and striped the bag on the narrow end of the tip.
I am also using 104 for Petunias but your flowers looks like different and nice.
