Hola

Es la primera vez que escribo en este foro.
Vivi en PR por muchos anos y cuando estaba alli tome unas clases de reposteria en La Academia De Azucar en Puerto Nuevo.
Llevo viviendo en Macedon NY por casi 15 anos y mi hija quiere que le haga un bizcocho como los de PR. He buscado en mis libretas de cocina/apuntes y no se donde esta la receta.
Hay alguien que me pueda ayuda

Hola, yo tengo un receta del libro de Carmen Aboy Valdejuly autora del libro Cocina Criolla y del libro Puerto Rican Cookery, yo personalmente la he hecho y me gusta el resultado final.

Golden Cake(Ponque)

1 pound butter (at room temperature)
2 cups sugar
12 eggs (recipe requires 12 egg yolks and ONLY 8 egg whites)
1 tablespoon fresh lime juice, or 2 teaspoons vanilla or almond extract
3 cups sifted cake flour
1 taspoon baking powder
1/2 teaspoon salt


Preheat oven to 350 F. grease a round 10 x 4 inch aluminum tube cake pan and sprinkle lightly with flour
Cream butter thoroughly. Add sugar gradually and mix. Add 12 egg yolks, one at a time, and beat well together. Add lime juice, vanilla, or almond extract, and mix.
Sift together dry ingredients 3 times and add.
Beat 8 egg whites until stiff. Fold into the mixture.
Turn batter into pan and bake about 1 hour, or until toothpick, inserted in the center, comes out clean.
Set the pan on a wire rack for 5 minutes. Remove from pan and allow to cool on wire rack, top side up.

Ponque Fino (DE Angelys)

INGREDIENTES

4 BARRAS DE MANTEQUILLA
2 TAZAS DE AZUCAR (CERNIDA)
12 YEMAS DE HUEVOS
12 ONZAS CLARAS DE HUEVO
3 1/2 TAZAS DE HARINA DE BIZCOCHO selfirising
1 CDA. DE BRANDY O EXTRACTO DE ALMENDRA
1CDTA DE VAINILLA

PROCEDIMIENTO

TODOS LOS INGREDIENTES TIENEN QUE ESTAR A TEMPERATURA AMBIENTE

1. BATIR LA MANTEQUILLA HASTA QUE ESTE CREMOSA (10 MINUTOS ).AÑADA 1 TAZAS DE AZUCAR Y SIGA BATIENDO HASTA QUE QUE MEDIA BLANCUSCA

AÑADA LAS YEMAS UNA A UNA ,BATIENDO BIEN DEPUES DE CADA ADICION.AÑADA LA VAINILLA Y EL LICOR ( O EXTRACTO DE ALMENDRA)

A VELOCIDAD LENTA AÑADA LA HARINA POCO A POCO DEJE A UN LADO BATA LAS CLARAS A PUNTO DE MERENGUE Y AÑADA LA OTRA TAZA DE AZUCAR Y SIGA BATIENDO HASTA QUE ESTEN FIRMES Y BRILLOSAS .

AÑADA LAS CLARAS A LA MESCLA DE MANTEQUILLA Y EN FORMA ENVOLVENTE HASTA QUE LAS CLARAS DESAPARESCAN VIERTA LA MESCLA EN UN MOLDE ENGRASADO NIVELE LA SUPERFICIE

CON UNA ESPATULA HORNEE EN UN HORNO PRECALENTADO A 350 POR 1 HORA O HASTA QUE ESTE ( SE LE INTRODUCE UN PROBADOR DE BISCOCHO EN EL CENTRO SI SALE LIMPIO YA ESTA)

Hola,yo tango una receta de la Academia del ARTE DE LA AZUCAR dONDE MENSIONAS LA RECETA ES LA SIGUIENTE:1 TAZA DE CLARAS, 3/4 TAZA DE ÁZUCAR CERNIDA, 3 TAZAS DE HARINA SELF RISING CERNIDA,3/4 TAZA DE YEMAS DE HUEVO, 1CDTA.DE VAINILLA, 1CDTA. DE SABOR A ALMENDRA, 3 CDAS DE RON Ó BRANDY

PROCEDIMIENTO;
cecreme la mantequilla y añada la las 3/4 tz. de azúcar. Bata por 3 minutos y se le van añadiendo las yemas 1 á 1. Se bate por 5 minutos a velocidad moderada.Encienda el horno a 325 grados F. Bajar la velocidad de la batidora a lo minimo y alterne las tres tazas de harina con las 3 cdas de brandy , la vanilla yla almendra. Se empieza con harina y se termina con harina. Se mezcla hasta que se desaparezca, sin batir mucho.
Amerengue la taza de claras en un envase y batidor libre de grasa y cuando empise a enblanquezer , se le añade las otras 3/4 taza de azúcar. Continue amerengando ,pero evite que se recequen las claras.Se retiran las claras de la batidora y se le anade a la mezcla anterior (mantequilla ,azucar yemas y sabores). Se mezclan en un movimiento envolvente. Tomese su tiempo para que las claras desaparezcan totalmente.Viertace a un molde previamente engrasado(pan grease ó algun otro cake release. Hornear por 1 hora aprox.

Sirup; poe cada 4 tazas de sirup mediano(la misma cantidad agua que de ázucar) preparado ,se le agrega 1/2 taza de brandy ó 1/4 de emulsión de almendra vierte sobre el bizcocho 3 1/4 tazas de sirup. En lo que se refiere al sirup este no es el que me gusta yo uso 2 tazas de agua y 1 taza de azucar ,2 cascaritas del tamño de la uña pequeña de las manos y pedacitos pequeños de rajas de canela pongo en una olla a fuego medium high cuando comienze a hervir reduzco el fuego a bajo por 25 minutos y apagoy le añado 2 cdas de brandy por cada 2 tazas de sirup y vierto sobre el bizcocho caliente (ambos) .

Espero que esta receta sea la que buzcabas es del 1997 Arte de la Azucar en la Ave. Roosevelt.

Muchas gracias por este post llevo años buscando esta receta tome clases ahi en el 94 y en una inducion perdi todo librro de recetas. Con tanta informacion como recepa por mordes cantidad de syrop por tamaño de ponque. Y la receta del la lamina de el brazo gitano si me pueden ayudar se los agradezco Dios los bendiga
