I am attempting to make petite fours and after I coat them I put them on my cooling rack to harden. When I go to remove them they are stuck and if I force them off I lose part of the petite four. What am I doing wrong? How do you go about covering them and letting them dry?

I guess it depends on what you are coating them with... is it hardening so much that it is causing this problem? I use a poured fondant on mine.

Also I am wondering if you have the gooey top side of the cake as the bottom - that'll stick. Try using the bottom or a cut side instead.

If all else fails I would cover the bottoms in something firm (like coating chocolate or marzipan) before dipping.

In my never exhausting efforts to make these little gems I have read where someone suggested spraying your cooling grid with non-stick spray to avoid this.
