Uh Oh! Out Of Eggs - Can I Add Some Mayonnaise Instead?

I have 2 eggs (the cake is for my family) - can I add mayo and leave out some oil? Any idea on quantities I should use?

What did you end up doing? I've never heard of adding mayo instead of egg. Did it work?

I was thinking mayonnaise because it is, basically, eggs and oil (and salt, vinegar...), but in reading further I read that the egg was a leavening agent and found this sub:

2 Tbs. water
1 Tbs. oil
½ tsp. baking powder

I haven't eaten any of the cake, but tasted the batter tasted great and it rose well, so I'm thinking it was an ok thing to do, lol!

If any of you need to make a cake without eggs there are a lot of great Vegan recipes online that taste pretty good. I had to find one when I made a cake for a little girl with a milk and egg allergy. They loved it!

If anyone wants I have a chocolate mayonaisse cake recipe from scratch. My aunt use to make this one and it's excellant.
