I have a bride that needs the top layer of her wedding cake to be gluten-free...does anyone know of a recipe or "mix" that taste good, and is gluten-free? Thanks for any help or direction!

If CD is the case, you must be very careful. "Celiac Disease (CD) is unique in that a specific food component, gluten, has been identified as the culprit. Gluten is the common name for the offending proteins in specific cereal grains that are harmful to persons with CD. These proteins are found in all forms of wheat (including durum, semolina, spelt, kamut, einkorn, and faro), and related grains, rye, barley, and tritcale. Damage to the mucosal surface of the small intestine is caused by an immunologically toxic reaction to the ingestion of gluten"
You need to stick to the approved recipe..do not substitute ingredients as you may endanger the well being of your friend. You need to sterilize your baking products before you begin, as some gluten/flour may remain. You need to clean down the oven just to be on the safe side. Even your VANILLA must be gluten free.
Potential harmful ingredients include:
Brown rice syrup (frequently made from barley) Caramel color (infrequently made from barley) Dextrin (usually corn, but may be derived from wheat) Flour or cereal products Malt or malt flavoring (usually made from barley. Okay if made from corn) Malt vinegar Modified food starch (from unspecified or forbidden source)
Soy sauce or soy sauce solids (many soy sauces contain wheat)
Individuals with CD get really sick when they ingest gluten...So I humbly recommend that you double chek with her if you don't know.

She was diagnosed with CD and that is the reason we are looking for gluten free recipes/products. She is actually trying to find the cake mixes already mixed up for me to bake a small cake for her to be placed on the wedding cake table....Will I be able to use decorators icing, do you think? The kind with all Criscoe, powdered sugar, vanilla, or will I need to specially make that from a gluten free recipe also? Thanks for the information....I will definitely talk with her about it.
I'm not sure if that icing would be a problem, probably not. I recommend you do some more research, just to be on the safe side....You can try a carrot cake with cream cheese frosting...
