Potato Soup

I was wondering if anyone has a really great recipe for potato or baked potato soup? The variety somewhat like O'Charley's? I love that stuff! I have looked up many recipes including Emeril's and most of them call for chicken broth which somehow doesnt seem like it would have the taste I am looking for...although it could be as sometimes something blends to where you dont really taste it...like buttermilk in cakes... I trust that Emerils will be good...but would like to try something that I know some of you have tried and love. Something nice and cheesy and with green onions and bacon...mmmmmm... Thanks in advance!

I make my potato soup in the crock pot from the Fix it and Forget it cookbook. I do use chicken broth, and in the last 20 mins add a little dried mashed pot. flakes to give it some thickness. at end garnish with bacon, cheese,a nd gr. onions.
