Any Good Carrot Cake Ideas?

I just got a request for a carrot cake from a guy my husband works with. He just requested something plain, but later I found out that it was for his anniversary. I was thinking of putting carrots around the edges. Any other good suggestions or pictures of cakes you guys have done? Thanks, kate

I put the nuts around the edges and sprinkle a few on the top.

What kind of nuts do you usually use? Walnuts?

I found THE best carrot cake recipe. I used (2) 10" round pans and I got so many raves about it.

Would you double this recipe if you were making a 9x13 2-layer cake?

Yes, I use walnuts. BTW, not the edges but the sides of the cake. Also, try ladycakes.com. That carrot cake is to die for and VERY moist. This one of the scratch recipes that I have tried and always has the same result, mmmm mmmm good!
