I just received an order for a cookie cake. My client's boss is turning 40 and I'm not sure what to write on the cake. Does anyone have any ideas?

Also, I need a very soft and chewy chocolate chip cookie recipe for my cookie cake. I used one before but it wasn't quite soft enough. Can anyone help me?

When baking cookies, I always pull them out a couple of minutes sooner than what the recipe calls for. I also heard that real butter when used in the recipe makes them really chewy.

What design are you putting on the cookie cake? Does he like sports cars? How about "sporty at 40" with a sports car?

I think I use Land O' Lakes real butter. I'm at my folks so I can't remember. I know it's the one with the Indian woman on the front. It's always the cheapest at the commissary. It tastes great! You can dip a knife into it & lick the knife! Yummy!

Last night someone was needing help with what to write on a cake. The website is SweetDreams. They had a whole lot of cake inscriptions ideas. Hope that helps. It sure helped me. I copied the list for future needs!

I bought a large family size package of the Pillsbury dough and divided it in half. If fit into a disposable aluminum pizza pan. I just spread it out across the pan evenly all the way to the edges. I just used my hands and spread it out. When it was done, I did a nice border in buttercream icing and drew a Texas Tech symbol and wrote "Go Raiders" and "Dallas (kid's name). He loved it. **My cookie was baked the least amount of time on the package and was SOOOO soft and chewy. I made an extra for our family, and we snacked on it for 2 days.

Hope this is the kind of cookie you were talking about. icon_smile.gif

I use the generic store brand and I have not had problems. Up by me I use Roundy's from Pick 'N Save.

Heres' the recipe I use for very chewy chocolate chip cookie cakes:

INGREDIENTS:
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

DIRECTIONS:
Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
Sift together the flour, baking soda and salt; set aside.
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Spread in parchment-lined and sprayed pan and bake for 20 to 25 minutes in the preheated oven, or until the edges are lightly toasted. Cool in baking pan for a few minutes before transferring to wire rack to cool completely.

Sounds yummy!! Do you have a snickerdoodle recipe that you might share Cookieman? My hubby was just talking about that. He loves snickerdoodles! I have never made them I always by them from the bakery. I would love to make them for him for his bday. He would rather have cookies then cake! He's a cookieman too! LOL!! Thanks~

I don't have one that I can easily cut and paste here, but the recipe for Snickerdoodles in the Joy of Cooking (latest edition) is great. Do you have that cookbook?
