I have been asked to make petit fours (around 100), I've made them before but did not sell them. How much should I charge per petit four? I'm not making anything real fancy just one basic filling and chocolate coating.

I price them, filled, starting at $2 each. Depending on the extra fiddle, that goes up.

I charge 1.75 each for a 2x2, filled, simple decor. If they want fancy shapes, poured ganache or fancy decor the price goes up. Minimum is 2 dozen.

I was wondering too.

Do you guys bake 2 thin layers, fill & stack? Or do you bake a thicker layer, torte & fill? Is it ok if the filling (like a jam) soaks into the layers?
