Making Fondant Cheese

I want to make a fondant wedge of gorgonzola cheese, I have attached a picture of this type of cheese, I need suggestions as to how to make the black/purplish spots/streaks, I was thinking food color and toothpick, but I don't know, also what color do you suggest I use for the wax wrapping ivory or brown maybe? any suggestions?.....

AI think your ideas are all good. Definitely ivory for the rind, blend it outwards. And a black/dark blue/purple mix for the mould spots. The toothpick is perfect for application as the cheese typically has small holes and veins of mould.

Yum I want blue cheese for lunch now!

I know right? I loove blue cheese,  question, what do you mean by blend outward?

AUse a thin layer of ivory paste for the rind, place it on the outside of the wedge of cheese which is lighter in colour, then blend the ivory paste toward the lighter coloured cheese part, to give the impression of a gradation in colour toward the rind. Hope that makes sense.
