Has anyone ever done this successfully?

Made a red velbet and want the ccf on it.   I use Paula Deen's recipe with marshmallow in it and it's wonderful.  Thinking I would frost the same as with buttercream and then into the freezer to set before fondant.

Opinions?

Thanks!

Jo

8" red velvet covered in fondant, painted fondant wood floor, weights, dumbells.

This cake I made last year was red velvet with cream cheese frosting. I did use a crusting recipe, and I put in the fridge before I put on the fondant. It worked just like buttercream.

Same day so won't be an issue.  But thanks for the important reminder.

you're welcome -- four hours is the total cream cheese can be out of temperature and be safe enough for all to eat -- bacteria is always multiplying and at four hours it has multiplied into the hazardous stage

Fortunately this is for family.  Fondant worked beautifully and, after your post, I've kept refrigerated until I take to the party tonight.  Love the sharing of information on this site.

Thanks again.
