AHi everyone, I am hoping that someone has a recipe or method to make Irish whiskey extract. I need to use it in chocolate ganache and it must be family friendly. Hence I don't want to add the whiskey straight into the ganache. I only seem to be able to find bourbon whuskey extract online. I have considered heating it in the cream in hopes that some of the akcohol would cook out but would rather not start out with 80 proof whiskey. TIA gor any suggestions, Monica

You could try boiling down some of the whiskey on its own...

a good chunk of the alcohol will burn off, but not all of it...

I do that when I make my Southern Comfort Cupcakes...

 

Just remember that it all won't come out...
