Curious

how far in advance have you made this cake and froze?

i routinely freeze my cakes (unassembled)  I have frozen this white cake on many occasions, well wrapped, up to 3 months.  It freezes beautifully.

Hi! I really like the mermaid bakery vanilla (yellow) cake's recipe shared here. Does anyone knows / can advise how to doctor the recipe to make white cake? Thanks!

Is the Fromscratch white cake recipe available somewhere else or is the only way to get it to pay for it?  Thanks

To my knowledge, Unless you downloaded or printed it out before she took it off her blog, the only way to get it know is to pay for it...

I felt that it was worth it... So did many others...

I just tried out the Beyond Buttercream recipe yesterday, which I followed to the letter and it turned out fantastic. Very even and soft crumb, I will definitely be using this as my base white cake recipe once I can figure out how to use it with organic AP flour. I will be testing out a new batch tomorrow.

I printed this recipe out awhile ago and just got around to making it. I had 7 people taste test it and they all LOVED it.

I just bought the file today, and it is the oven right now using 3 whole eggs, butter, and buttermilk (since I had buttermilk on hand). I tasted the batter to see if I had enough vanilla extract, and it tasted so good. I am going to make a batch using regular milk and shortening after this batch to compare.

I had printed the recipe out before she started selling it, but I also bought it because I felt I owed it to her to pay for it because it was so good.  This is  my family's favorite recipe.

Okay, so this is my update. I love the flavor, the cake came out great but it stuck to my pans, 3 out of 4. I made 2- 4" and 2-6". I use my homemade cake release (equal parts of shortening, oil , and flour). I have never had problems with it before. ??? So now I am making the recipe with whole milk, and shortening, and the same size pans, but this time I am making two with my cake release and a parchment circle in pan, and the other with a spray food release and parchment circle to see if it comes out okay. Anybody have any ideas as to why it stuck? (and I mean STUCK!)

I have always put parchment on the bottom of my pans... I wouldn't have ever not put it, so I can't help on the sticking part...

But it is wonderful!

Is there any way to get the Scratch SF white cake recipe? I can't find it for sale anywhere or on her blog.

Hey Nursekris,

It is apparently no longer available.  I also noticed that her bakery has closed.  I hope she is alright.  Anywho ... many people on this site have the recipe including myself, but I need permission to pass it along.  Why don't you start a new thread to see if somebody will give us permission to reprint it since she is no longer selling it.  Make sure you include the "Scratch SF" and/or "Beyond Buttercream" somewhere in the title.

Nancy

@Baker8690 ‍  It should be for sale on Etsy. It's like $30.

Oh gosh. OK I was trying to make a delicious cake for my sons first birthday, I'm by no means a professional so $30 is not doable for a recipe, thanks for letting me know though!

@Baker8690 ‍ I know, it's a bit pricey, but many swear by it as the cornerstone of their businesses and she also includes variations to make a number of different flavors of cake using the white recipe as the base.

I would describe it as the closest you can get to a box mix made from scratch. It's a bit sweet to my taste but the texture is really nice. I don't know if you can reduce the sugar and maintain that velvety softness.

There are tons of good recipes floating around out there for free. Take a look at I am Baker's white cake.  Good luck!
