I made these cupcakes, filled with Cake Boss's raspberry filling, and WBH House BC...They were DELICIOUS!
1 box yellow cake mix
1/3 cup oil
1 cup buttermilk
4 eggs
3 tsp coconut extract
1 cup sweetened shredded coconut
Combine everything except the shredded coconut in mixer. Mix on low for 30, then medium for 2 minutes. Add coconut and mix on low until combined. Bake at 350 for 15-20 minutes.
