After experimenting with different recipes, and not finding the right one, I decided to make my own, and here it is. Hope you enjoy as much as we do !!!
1- pkg Duncan Hines Moist Dlx White Cake Mix
1- pkg white chocolate pudding by Jell-O 3.3oz
5 egg whites
1 cup water
1/2 cup veg. oil
4 ounces finely chopped white chocolate (Baker's) Premium white chocolate baking squares, you will need the whole box i'll explain later
1- 18oz jar of smucker's strawberry preserves or any flavor you like but I definetly prefer strawberry
2- cups whipping cream, chilled
2 tablespoons confectioners sugar
2 tablespoons clear vanilla (I prefer wilton)
2 ounces of white chocolate shavings for garnish (and this is why you need the whole box, there is 6 oz in total on box)
Preheat oven to 350, grease bottoms of 2 (9 inch round pans)
Combine cake mix, pudding mis, egg whites, water and oil in large mixing bowl. Beat at med. speed w/electric mixer for 2-3 minutes. Fold in the 4 oz of chopped white chocolate, pour into greased pans and bake at 350 for 25 to 30 minutes or until toothpic inserted in center comes out clean. Cool in pans for 15 minutes, invert onto cooling racks. Cool completely.
Beat whipping cream in large bowl until soft peaks form, add the confectioners sugar and vanilla and beat until a stiff peaks form about another minute, if you beat too long it will break and look like cottage cheese, keep an eye on it ;)
To assemble cut each cake in half, you will have four cakes, place in favorite serving cake plate and spread the strawberry preserves on each layer that will make 3 then frost side and top of cake with whipped cream, decorate with remaining 2 oz of white chocolate shavings on top, refrigerate until ready to serve, in our case by the time I was done assembling my kids were lined up for a slice ;)
