Fluffy Strawberry Frosting

This recipe has been in my husband's family for years. Their traditional birthday cake is an angel food cake covered in this frosting.
1 10oz. pkg frozen strawberries with juice
1 tbsp lemon juice
1/2 c sugar
dash salt
1 pkg Knox gelatin
1/4 c water
1 c whipping cream
Drain the strawberries reserving the juice. Bring the strawberry and lemon juices, sugar and salt to a boil.
Dissolve the Knox gelatin in the 1/4 c water. Add the gelatin to the juice mixture. Remove from heat and allow to cool.
Meanwhile, prepare the whipping cream.
Once cooled, add the strawberries and fold in the whipped cream. Refrigerate until set.
